For the quail eggs
  • 48 quail eggs for 6 portions
  • Salt and pepper, to taste
For the quail egg sandwich
  • 2 medium tomatoes, sliced
  • 1 ounce arugula

For the sausage

  • 1 pound ground chicken
  • 1 ½ tablespoons dried fennel
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons avocado oil
  • ½ medium white onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme, minced

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit and spread avocado oil evenly onto a baking sheet.
